Falmouth Trip - Team Training Day!
A couple of weeks ago Aled and I took a trip down to Cornwall in search of the freshest fish and the finest Cornish seafood (and excellent beer). After a long drive from Snitterfield and a quick kip in a cosy B&B in Falmouth, we were up before the sun to head to the harbour and Newlyn Market in Penzance, meeting George from Falfish (our Cornish fish supplier) to see the fish auctions in action. Every day up to 30 species of the freshest Cornish catch are auctioned here, and restaurant owners, fishmongers, buyers and chefs all come together to bid on the best fish Cornwall has to offer. We saw plenty of fish that was most likely heading to The Farm later that day! George then showed us the many varieties of boats – from the one man mackerel boats to huge trawlers which require a full squad of seamen to run!
Next we headed to Redruth – the head office and factory of Falfish. We had the complete tour, from where the fish came in, to rooms where we saw people taking fish off the bone faster than piranhas and shucking scallops at super speed, to barrels of sprats marinating ready to be shipped off to Scandinavia. The size of the factory was incredible – apparently they had received 60 tonnes of sardines that had to be processed that day.

, we spend some time working on a large variety of fish and different ways of filleting them in Falfish’s specialised training room.
Heading back to Falmouth that evening we were in the mood for something fishy to eat, and found Verdant’s seafood bar - a brewery that had recently opened a specialised seafood small plates menu. Favourites from the menu were the smoked haddock scotch egg and the Cornish mackerel with kimchi and barbeque glaze, all paired with some well earned beers.
Heading back to Snitterfield (and braving the flooded roads - we needed one of those mackerel boats!) with full bellies and brains full of fishy knowledge we were very glad to have made the trip – feel free to ask Aled about it!
